Star Wars is not a trilogy. It is and always was intended to be a serial in the model of Flash Gordon and Superman. The reason for the break in the middle was Lucas's desire to stay home and raise his children. When they were old enough He made another three movies. There are supposedly three move movies that could be made but he is tired and wants another break.

A lot of people don't understand that the trilogy formula that star wars started is actually a marketing technique used by production companies when they've made a successful first film. The matrix used the same formula, although the actors signed for all three movies, no one knew if the first would do well. As of most recently, Resident Evil and The Pirate of the Caribbean.

The trilogy formula has been around far longer than Star Wars has. Although it was certainly made popular during that time with the birth of the blockbuster in the mid-1970s. Many many film have gone on to use the formula. Lord of the Rings, Evil Dead, Pirates of the Caribbean, hell, even Resident Evil is "wrapping up" a trilogy.
