Do you mean the little white table things that are in the pizza box? This is meant so that you can stack the pizza boxes 3 or 4 high, and the middle of the pizza box won't sag down (due to the steam and weight) and mess up the bottom pizza.

That little "table" prevents (or tries to prevent) the cheese from leaping off the pie and onto the lid of the box.
