If you don't think the rhyme has anything to do with rhythm and meter, try this: take a poem that has rhyming words on the ends of the phrases. Write it out as though it were prose (non-poetry, just write it as though it were regular sentences) and read it only according to the punctuation. Listen to how the rhyme makes the rhythm and meter stand out, even when you're not reading to fit it. Fun, hm?
If you ever need to do a poetry reading out loud for an audience, I would highly suggest writing the poem out as a paragraph and only reading according to the punctuation. That's a trick that makes a good reader an excellent one.
