There was an article in San Francisco Magazine awhile back and a few local chefs mentioned one in particular that was off the Strip. I can't remember what it was, but I'm thinking it may be Flemings, which is a chain or at least has several locations in California. The chefs said that the rib eye was the best they've ever had. Anyone remember?

I've had the good fortune to have tons of expense account dinners in Las Vegas.

Because of that, I've also gotten to try, pretty much, all of the high end steak houses in town.

In my mind, there is no "best" steakhouse, as all of them offer something different.

So, here are my "top five":

1) Del Frisco's Golden Eagle Steak House (off strip)
Great for steaks (of course) and notable for their great wine list. Of all the places I've been in Vegas, this one feels the least "Vegas" of all.

2) AJ's (Hard Rock)
The only place I've found that feels "old Vegas". The room itself calls out for beef and cocktails (make mine a dirty sapphire on the rocks) and both the kitchen and bar deliver.

3) Emeril Lagasse's Delmonico Steakhouse (Venetian)
Great room, great steak, great sides, great wines. Only downside is that they're prices are high even by premium Vegas standards and the desk staff can be oppressive.

4) The Steak House (Circus Circus)
Yes, the hotel sucks. Yes, the casino is tired, old and nasty. All of that aside, this place rocks. The meat is great, the wines good (and well chosen and fairly priced) and the room takes you back to the 19th century. No one part will wow you, but the whole thing, strangely, works.

5) Craftsteak (MGM)
It's over thought. It's over priced. It's uber cool. Still, it works and, if none of the others appeal or if you've got a group that's too cool for themselves, this is a good choice.

There is no arguing that Flemings has great steaks, but they are not USDA prime cuts of beef. They use better than choice cuts, but not prime grade. Their wine selection is vast, and the prices are still reasonable. The location is in Summerlin, which is a 30 minute drive from the Strip.

If I was to recommend a steakhouse close to the Strip it would be Ruth's Chris. They use all prime cut beef, and their wine list rivals any 5 star restaurant. The atmosphere is old school Vegas, and the service is superb. How can you not love a restaurant that prints a disclaimer on their menu for beef ordered well done!

I've been to Flemings, and I agree totally with the chef. Everything we had was fantastic. I do highly recommend it, because of the good food, the atmosphere, and the excellent service. But if you want something closer to the "Strip" Hugo's steakhouse at the 4 Queens is great.

Steakhouses and Vegas are a match. The best? Hard to say. One of the best steaks i had was at Hanks in the Gren Valley Ranch.12 oz filet w/ creamed spinich and mushrooms as sides. Excellent. If youre looking for something a little more down to earth i say go to Billy b ob's at Sam's Town. Steaks are hard to mess up so Im sure wherever you go youre gonna walk away happy

Are you a chain person? There are Morton's, Ruth's Chris, Fleming's, Outback, etc. But my favorite is Delmonico's.
Double Eagle is not all that great and is terribly expensive (and I'm not cheap). Delmonico's can be hard to get into, but their drinks are the best I've ever had, their tableside-made ceasar salad is the best I've ever had, and really, everything was very good.
