if i was just minding my own business and some people were to come and talk **** to me and start fighting me, and i pulled out a knife and sliced one of them, is that punishable by law?

remember now, THEY all started fighting me, about maybe 3 or more people. and i didnt throw the first blow

Yes. You were armed and they were not. You also introduced a weapon into the fray. By your own statement, they were "talking" to you, not hitting you. Even if they hit you, the knife makes it a different story in court.

Using a knife against fists is probably punishable. That is not responding in kind. Carrying a concealed weapon is certainly punishable. In any case, I hope you have some trustworthy witnesses to support your version, otherwise you may be in a whole lot of trouble.

It should not matter.

If you pulled a knife and stabbed someone because you were scared for your life, what does it matter to you? YOUR ALIVE!
