Well, first of all, people are probably going to tell you it's the "rhythm method" and that it's not very effective. It's true that the rhythem method was in wide use in "the old days" and it works fairly well for women with regular cycles, but not every cycle is regular.
The method has since been GREATLY improved.
The Catholic Church endorses this newer method to postpone pregnancy - it's called Natural Family Planning and it is 98-99% effective which is as good a record as most other forms of birth control. Here are the results of studies showing its effectiveness:
http://ccli.org/nfp/basics/effectiveness-p02.php
Best of all NFP is virtually free - all you buy is some charts and a basal thermometer. That's it! There are no unpleasant side effects either.
Contrary to popular belief, this method is also not HARD or very technical. You simply track the women's temperature and cervical mucus. After a month or so, it's like second nature and as a plus, many women learn a lot about their cycles and can catch potential problems very early.
Even better, while NFP can be used to postpone pregnancy it also has a GREAT track record for helping couples achieve pregnancy.
I commend you both for choosing a natural method that is shared by both husband and wife, and that is ethically sound.

The Catholic Church has endorsed an "updated" version of the old calendar or rhythem method. It's called Natural Family Planning or NFP.
Very effective - like 99% when used correctly.
Also cheap! And no side effects for the woman.
You can get more info at the Couple to Couple League.

First off your wife HAS to be very regular with her periods and she's got to "track" them for a few months. It helps if she knows when she ovulates. For a few days before through a few days after she ovulates you can get her pregnant so you shouldn't have sex. (usually ovulation takes place about the 14th day of her cycle starting with the first day of her last period). If you *must* have sex pull out.
I can tell you from previous experience that this method is not reliable mostly because people get carried away and have oppsies. Hense why traditional catholic families are so large.
Maybe condoms would be the better answer since at least they are more reliable. Good luck.

The only guaranteed method of 'natural' birth control is abstinence.
Use any other method, like the pullout/withdrawl method, or the rhythm method, tracking your ovulation, would just leave it up to chance.
If you want to have sex without an outside form of birth control, you are just going to have to accept the fact that you could get pregnant.
