Just about any Western directed by John Ford, but especially those starring John Wayne!
Stagecoach.
The Searchers
Man Who Shot Liberty Valance
Fort Apache
Rio Grande
She Wore a Yellow Ribbon
These are the best westerns!

For me, it's a close call between Unforgiven and Pale Rider.
Honorable mention to Quigley Down Under for having some comedy elements, having the setting in Australia, and co-starring Alan "Snape" Rickman. :-)
