The Man Who Shot Liberty Valance. There are so many exelent western movie actors in it that it takes my top pick.

For me, it's a close call between Unforgiven and Pale Rider.

Honorable mention to Quigley Down Under for having some comedy elements, having the setting in Australia, and co-starring Alan "Snape" Rickman. :-)
