Ooo! Definitely Pride & Prejudice! You'll all be going fangirl over Mr. Darcy by the end of it! Also...Return to Me, You've Got Mail, How To Lose A Guy In 10 Days, (I know it sounds odd) Star Wars: Ep. V The Empire Strikes Back, Mission Impossible 3....
Maybe I'm just weird, but I'm the kind of girl who likes action movies...yeah...I must be weird..lol!

You can certainly go with the mushy girls movies. I am sure you can come up with lots of choices. My favorite way to do this sleep over thing is too find a star everyone likes and rent a bunch og movies he is in.

She's the Man is good but also Princess Bride, Nottinghill, My Best Friend's Wedding, and What a girl Wants are great as well.

out of your list you put up, She's the Man, or from my opinion, The Notebook, Music and Lyrics, or any mushy, cute romance movies...sounds like a typically fun movie/sleepover!
