The best in terms of game play and storyline are Final Fantasy 7 and Final Fantasy 10.
Final Fantasy 12 suck.

A lot of people will say FFVII is the best FF game out there, but it's probably only because it was their first FF game because of the popularity of the PSX. But FFVI is actually the best FF game.
For starter, you get to play in 2 different worlds. The first world is when the world is on the brink of destruction, and the second world is the world after Armageddon.
Second, the lead character is a female, unlike previous FF games and future FF games (FFX-2 being the exception). It's a nice change from other games where the male is always the lead character.
Third, the music is just phenomenal, especially since it was on the SNES. That's incredible. Think about it. Back then, Square had to fit the game and the music into 1 tiny cartridge. There was no surround sound, only stereo sound if you have a stereo TV.
Fourth and most important of all, each character was unique. Locke was the lockpick specialist, Celeste was the healer, Sabin was the muscle, Edgard was the weapon specialist, Gau was the animal imitator, Terra was the transformer, Shadow was the ninja, Setzer was the gambler, etc. There were so many characters to choose from.
Fifth, it was a great storyline. You can feel the sorrow in Terra after the world was destroyed, and a bunch of kids were left as orphans. Or Cyan's grief over what happened to his family.
Just so you know, FFVI was released on the PSX. It's difficult to find the game because it's one of the best FF game ever made. There's a possibility that it could be remade for the PS3 because Square-Enix showed off a demo of the game at E3 a few years ago.

Since you are new to the series, you could start with any of them. You'll probably want to play any of the newer ones, meaning the ones released for the PS2. The PS1 FF games have poor graphics, simply because they are PS1 games. If you want an epic storyline, I'll recommend Final Fantasy X (10). If you are more interested in gameplay than storyline, give FFXII (12) a try. All the FF games (excluding FFX-2, or any of the FF7 spinoffs) have all new characters and storyline, so it won't matter if you've never played a FF game before. Enjoy, the Final Fantasy series is my favorite game series ever.

I would start with FF7 (PS1), just to get you caught up, that's the most popular FF to date...although I prefer FF8 because the graphics and characters are more fun, and less grumpy...
Learn the battle system on FF7 and then, if you still like the game style, get FF8(PS1) and FF10 (PS2) (also awesome graphics, and voice overs too!)

the best one is final fantasy 7, but it isnt gonna be out for a while, because there still translating it to english. but you can play the japanese version. its for psp though
