I think it has to do with the way heat rises. The flame is elongated because the heat it is generating carries it upward.

I think I've read that if you lit a candle in space, like on board the space shuttle, the flame would be spherical. Without gravity, there is no difference in the "weight" of hot air over cold air, so the heat radiates outward in all directions instead.
