Either your headphones are burned out or your whole headphone jack is burned out. Try lots of pairs of headphones to see if it's just the ones that you were using. If it doesn't work, put your iPod into diagnostic mode. Reset the iPod by toggling the hold switch on and off, then hold down the menu and select buttons until the Apple logo appears. Then as soon as you see that, press down and hold the previous and the select buttons until a strange menu comes up. Select the "IO" option, push select, then go down to audio. (Hint: sometimes in diagnostic mode, you can't use the click wheel and have to hit the previous and next buttons to move through the menu.) Select "Audio" and then select "Lineout". Plug in some working earphones, and follow the instructions on the screen. Oh yeah, you might want to hold the earphones away from your head, because the beep is really loud! If you don't hear anything with different pairs of earphones, then your headphone jack is messed up. Send it into Apple and they will repair it.
