Pull out what you can and lay landscape fabric around your flower beds. Just cut holes in an X formation to place over your plants. It is unattractive, but easily concealed by mulch which also makes your garden more appealing and the mulch offers the benefits of retaining moisture. Pouring boiled water on the offenders can work, but it is time consuming and only works in the short term. Some gardeners may suggest using a dilute formula of vinegar and water. DO NOT use this method as it will damage your soil.

Carpet grass? It depends on where you live as to the common name of grass. There are herbicides that limit their effect to just broad leaf plants or just narrow leaf plants. Ask your nurseyperson. Even still I would use it on a small area first to make sure it does not affect the plants you want to keep. By the way some use the flowering plant/nonflowering plants to describe the herbicide but there are some desirable flowering plants that have narrow leaves. Thats why you should test first.

This grass is so hard to remove from the yard. How about taking a hula hoop and laying it on the area, and rid one hula hoop a day? It gives you a target to accomplish. then ask your County Extension Agent for the advice he would give for your area of the country.

PS The word you mean is INVASIVE not evasive. It means it INVADES your beds. Evasive means it is hard to find, or trying to avoid.
