It's called a dual role.
Even though "dual" (strictly speaking) means "two," the term is used to refer to any instance of an actor playing more than one role, even they're playing three or more.

"Doubling"? I know that's a common term for someone who plays more than one instrument in a band but I don't know if it also applies to acting.
