Oh, there are soooo many to choose from...

My favorite is Emeril's Delmonico Steakhouse at the Venetian. We have been there and Emeril's Delmonico in New Orleans (the city, not the hotel...) and both are really fantastic. The food is consistently excellent and the service is impeccable. My wife and I have been been there several times and it is always great.

They would have no problems handling a party of 7. In fact, when your entrees arrive, there will be 4 waiters and all of the dishes will hit the table at the same moment.

It's not a pure steakhouse, but Thomas Keller's Bouchon at The Venetian is a truly exceptional restaurant. The steak frites is fantastic.

(Hmmm... Start at Delmonico's Steakhouse and then go to the other side of the hotel for Bouchon... Ahhh, gluttony!)

There is also a Morton's of Chicago in Las Vegas. I haven't been to that location, but I have been to others and they are excellent. You get to choose the actual piece of meat that they will cook for you. Kind of fun.

If money isn't an option, then i would go with, CraftSteak @ MGM. Excellent steak and seafood.
Prime @ Bellagio.
Another one of my favorites is Hugo's Cellar at the 4 queens, downtown las vegas. Very intimate setting, and the food is excellent. Unlike the other, it isn't ala carte. the cold seafood appetizer, is my favorite. Then you the complimentary, chocolate dip strawberries. :0)

I'd go to Ruth's Chris Steakhouse. Not only is the food excellent, but they'll treat you like royalty when you tell them it's a celebration. Good luck!

Delmonico's in the Venetian.
Depending on how much stuff you get, you can easily spend $100/person (drinks, apps, salad, meal, dessert, etc.) Their tableside ceasar salad is the best in the whole, wide world!
