The more years that can be covered on a graph the more interesting it will be, so find some data that cover a long period (perhaps 100 years or more) and plot the data year-by-year. For example, for your home town contact the National Weather Service (or whatever agency does that in your country) and get the mean annual temperatures, or perhaps the mean temperature for a particular month, or rainfall, and plot that. Try to see whether things are changing over the time span of the graph.
