Tabitha is the best spelling! I also love this name, it's not weird but it's not too common either!

I'm against monkeying around with spellings, especially with a name like Tabitha. It isn't terribly common and there's pretty clearly an original form. The variants you've listed - Tabetha, Tabatha, Tabytha - look unsophisticated.
But Tabitha is a great name!

Tabitha is at the moment the most common spelling, as I haven't really heard of it being spelled otherwise, but I've sometime seen Tabatha, although neither may even be close to the root spelling of it. Just choose the one you like, but be aware that the other two would look strange on paper to most people.
(Also, as a note to the other answerers, she means the spelling, the name is intended to be pronounced the same.)

I think Tabitha. This is the most common spelling for the name. Everyone will spell it this way anyway. You don't want people spelling your daughter's name incorrectly all her life - she will hate that.
It is an unusual name - you don't have to go for an unusual spelling.
BUT having said that, my daughter's name is Caitlin and we chose that spelling for the same reasons I said but people still try to spell it Caitlyn or Katelin etc

Tabitha. For the reason being that when the childs friends/family write a birthday ccard they will hopefully get the spelling correctly because its spelt as it sounds. It will get very frustrating for the little one if no one can spell it.
