Some suggestions:
1. Gift cards to office supply stores like OfficeMax or Staples
2. Gift card to restaurants (teachers like to eat out once in while)
3. Gift cards for movies and entertainment.
Boxes of tissues, magic markers, pencils with erasers, stickers, etc.
A mug with a bag of candies- hard candies and chocolate.

What grade does he teach? This may seem odd but I would get him something he can use in his class. I am sure he has enough apple-shaped ornaments to fill a tree! ;) One of the best gifts I ever saw a fellow teacher get was a huge jar of rewards like pencils and book marks. The teacher used those the whole year to bless students who hadd needs and reward those who had been working extra hard. Good teachers do this anyway but it was nice to have someone else help fill the jar for a change. ;) Find a nice container or even a small locking chest and fill it with things that would be age-appropriate for his students. Older students would appreciate pens, pencils and highlighters while younger ones might like crayons, erasers, or small pencil sharpeners. A good teacher will always appreciate something that can be used for his or her students.

As a middle-school math teacher's wife, I know my husband *loves* gift certificates! BestBuy, or Borders, something like that.
But chocolate is always good (and that's not just me asking for chocolate!).
But even just a card saying how much you appreciate him/her is good, too. :) Really, a kind word of support does a lot for a teacher, from a parent.

Between now and Christmas, try to have small conversations about thinggs that you like, and theat HE likes (so as to disguise your intentions!). You know... "Hey, Mr. Sullivan, read any good books lately?" or "Hey, Mr. Sullivan, I was talking to a friend of mine about our hobbies. What kind of hobbies to you like to do?" and so on...
This way, you can learn about the kinds of books he likes to read, what subjects interest him, what kinds of hobbies he likes to do... etc. From there, it should be really easy to find something special for Christmas.
Oh, and make sure it's an "out of class" type discussion, so he knows you're not just interested in HISTORY books ... if the class he teaches is history... or whatever!

teachers usually have to spend their own money on classroom supplies and decorations.
I make it a point to get my daughters teacher a 20 dollar gift card at starbucks, and 50 dollar gift card at a teachers school supply store.

My favorite gift I get for teachers each holiday season is a popcorn bucket or bowl, fill it with microwavable popcorn and treats with a gift certificate to your local movie rental place- ours is Blockbuster. They do so much for others I think it is nice to give them a treat for themselves!

Teachers spend a lot of out of pocket for supplies due to budget cuts. Gift certificates to office products stores like Staples, Office Depot, Office Max, etc. would be appreciated for sure!

You could make a scrapbook or collage of class memories/pictures with a personalized note. You could also find a really nice photo frame with a meaningful picture.
