Other animals come along and eat the roadkill. Usually it is just pulled off the road and left to decompose. Maggots are great as are birds for getting rid of carcases.

The local highway dept. picks up most of it and disposes of it.
Sometimes, roadkill is picked up by fly fishermen, who use the hair and fur on the neck of the animal, in particular, to make fishing lures.l

Hi,
Your local animal control center is responsible for picking up road kill. Los Angeles county explains that their department of animal control collects road kill, shelters stray cats and dogs, enforces leash laws, and investigates cases of animal abuse.
An article from the Arizona Republic gives its readers a look into the life of one animal control worker. Wayne DeLuca explains that his department picks up about 50-60 dead animals every day. He's picked up cats, dogs, coyotes, and even a monkey.
The article (second link below) makes for a good read, but it's not for the weak of stomach.

why, where i come from the 'roadside kill cafe' picks it up and cooks it fer all the tourists that come into our neck of the woods. you would be amazed at how the tourists dig in to their specialty menu items without question as they think it is cultural food. lol....some items on the menu include 'braised bear in bernaise sauce'...' porcupine soup'...'deer on a bun' with salad...'skunk souvlaki' and the house special...'redneck fried rabbit'. you should come to visit. we`ll put an expired bird on the grill for ya`.

I watched a show on Discovery Channel a while back and it showed a man who drove around in his pickup truck and picked up deer carcasses. He took them to the local landfill and disposed of them.

Well, the State Departments of Transportation handle that here in the U.S. If you hit a deer, though, you are allowed to keep it to eat. I believe you have to tag it, though. If you hit a deer and don't want it, the sheriff's office has a list of people who DO want them as they are hit.
