A rock can go forever without water. So can a dead tree, or a pickle or a book.
Any of these could be useful in any kind of desert - the rock to put your feet on, the dead tree to lean against as you read the book eating the pickle.
If you mean what animal can go without water, that would be a camel. They are useful in sand deserts, as their feet are wide and splayed to prevent them from sinking into soft sand.
They aren't as useful in rock or volcanic deserts, because their feet aren't hoofed and could be cut by sharp rocks.

here are two kinds of camels the 1 humped or Dromedary and the Bactrian or 2 humped. each can go without water from 6 to 10 days and are useful as beasts of burden in the sandy deserts because they have a very large hoof compared to body size.

A cactus stores up water for long periods of time. Not sure about the desert type though.
