if you want better dance coordination, then definitely ballet. if you want core strength, then both...pilates was developed FOR ballet dancers to help improve their core strength and other muscles that are used for dance

Pilates is a stretch and toning form of dance. Ballet is well Ballet. But taking both helps you out so much. Pilates helps you in stretch, stretch and balance and Ballet helps you in technique.

Ballet will give you more dance coordination. It isn't "better" as an exercise overall (that's a matter of opinion :) but ballet will certainly help with movement and grace.

Pilates is an excellent supplement to ballet since it strengthens your core, which will help to improve your ballet. You need strength in order to succeed in ballet.

Pilates has traditionally been a form of exercise used by professional dancers to improve core strength and flexibility.
Why not do both?

probably ballet. its the core of all dances. but most older or more experienced dancers take pilates for strength, flexability and toning
