Yes----everything that goes up has a 100% probability of coming down. (gravity)

There are several laws of physics which, unless you want to get extremely philosophical (i.e. the sun has always risen but *might not tomorrow), are 100% probable and acceptable as fact without a shadow of a doubt.

Probably not.

We can only truly say that we have made a best guess based on the information that we currently have available to us.

Most scientific facts are based on premises that we choose to accept as being true. Without these premises, or postulates, we cannot prove anything to a perfect degree.

For example, mathematics is based on the Peano postulates. Without those postulates, mathematics cannot exist. However, those postulates are man made, and are thus imperfect.
