I am mostly interested in specifics of IT world: software companies. I signed an offer and gave a 2-weeks notice, but my current company is in such a poor shape that I feel somewhat insecure to reveal where I am going. can it be for a good reason? Or it's just me being extra cautious?

If you feel insecure, then just let him down gently by saying you're taking a break, then you'll decide what you want to do. But if he knows you already got a job and you don't want him calling you there, just smile and say you'll tell him when you've passed your probation and have been confirmed as a permanent staff. Of course you don't call him again.

Some people are very pally with their colleagues and keep in touch no matter what. So there's no right or wrong. Just do whatever makes you sleep well at night. Good luck on your new job.
