I think a better sentence would be
Ed sat on my left and held my hand throughout the entire procedure

i think it should be... Ed sat at my left side, or Ed sat beside me... and Try changing the sentence to During the entire procedure, Ed sat beside me while holding my hand so u could differentiate the actions done more clearly :)

It's sort of awkwardly phrased. It might sound better as
[Ed sat by my side and held my hand during the entire procedure.]

you could try:
"Ed sat on my left side, holding my hand during the entire procedure"
or
"Ed sat on my left side, while holding my hand, during the entire procedure"
just to break it up a bit.

I'm with the Dark Prince on this one. While the other answers are also well-written, they don't include which side Ed is sitting on which is an important part of the visual description.
