Cotton is a good choice, silk as well.

BUT

The best way to do this is to wear many thin layers, instead of a few thick ones.

Each of the thin layers traps air between them, this air warms up and acts as a personal insulation/heating system.

Having said that some of the most modern synthetics are omni directionally porous and will allow moisture to pass through away from the body, but are waterproof the other way.

Most synthetic materials are neither absorbent nor insulating; even though synthetic polymers are normally poor conductors of heat, the layers of it in clothing are too thin for them to serve this purpose. A natural fabric is a much better choice. In addition to protecting your body more effectively from the cold, they are absorbent enough to prevent sweat from making your skin feel uncomfortable.
