I work at a Subway and there isn't a "sub sauce" we have many different sauces although some of them are recommended for certain sandwiches. Here is a list of all the sauces we offer at the store I work at.
Red Wine Vinegar (the red wine vinaigrette is no longer offered)
Oil
Light Mayo
Sweet Onion Sauce (if you got the chicken teriyaki they should have offered this to you)
Chipotle Southwest (this is most common on the Steak and Cheese)
Ranch (Lots of people get ranch on lots of different sandwiches)
Buffalo Sauce (this is the hottest sauce Subway carries and is what we use on the Buffalo chicken sandwich)
Regular Mustard
Honey Mustard
Spicy Brown Mustard
BBQ Sauce (this is around for a limited time to be used on the new Beef Brisket)
That is all of the sauces we carry right now at the store I work at. If you were to ask me for the "Subway Sub Sauce" I would probably ask what sandwich you were getting and then make a recommendation based on what most people got on that sandwich. Subway has recommended formulas for sandwiches but there is no set standard. You can get your sub any way you like it!
