I'm really just guessing, but maybe a photon of, let's say, violet light is carrying more energy than a photon of red light?

Energy.

In the wave description of light it is wavelength, or frequency, that is the color.

The energy of a photon of light is proportional to the frequency. Blue photons have more energy than red photons.

The particle is a photon. It can be described by the energy of the photon. Frequency and wavelength wouldn't make sense because those describe waves.

Color is nothing more than the observable wavelength of a photon. And yes, the more towards violet in teh spectrum one goes, the shorter the wavelength. The shorter the wavelength, the greater the energy.
