Its all about the atmosphere, then the service, then the coffee. Would you still go to a coffee shop. if you knew that the service was poor.
By the time you would have the best coffee ever, your tongue would be hanging down and throat all dry.
Who thinks that the coffee is terrible if you are having a wonderfull time in a fantastic place with staff around smilling all the time with you.

What makes a good coffee shop?
1) Good coffee;
2) friendly staff (looks aren't important);
3) newspapers/magazines;
Favourite things - mainly the coffee but also yummy cakes.
Few more staff during busy periods would keep the queue down.

I'm told coffee must be left to mature for an hour before before being served. So as the most important thing about a coffee shop is the taste of the coffee it sells, then this is the answer.

The greatest coffee shop doesn't exist to the best of my knowledge, but it would have. . .
polite and knowledgeable staff that are dressed nicely (no piercings or tattoos showing either) who are friendly and good at customer service
good warm atmosphere, pleasant decor
bookcases full of books to read
a brick fireplace
comfortable seating
a quiet area for studying
Internet access
excellent coffee and a good variety of the same
lots of "home made" treats and foods
a kid's seating section with small tables, books, games and toys
very clean and well stocked bathrooms with changing areas for babies
a section that can be reserved for parties
catering
good prices (not outlandish prices like a lot of coffee places - I won't mention names!)
family owned and run would appeal to me too
My family is thinking about starting a coffee shop of the same!

These days people open coffee shops without any knowledge of good coffee. The cup should be warm and the coffee strong with a good head. Milk separate to add to your taste.
Cafe Nero makes good coffee and it is consistent flavoursome and strong. Air conditioning in the Summer attracts more customers along with quiet background music.
I would add to this. Perfect a few good unique toasted sandwiches and cakes and your going to be business for a long time.

Good coffee, for me. Also the possibility for a little privacy. Maybe some books and magazines around and a comfy chair. Now that i think about it lighting is quite important. Some coffee shops put me to sleep :)

First is great coffee and a nice variety.
Comfortable chairs to sit in and plenty of room so you feel you aren't sitting in other people's laps.
Clean- clean bathrooms and clean table and floors. Nothing is worse than a place that is dirty.
Soft quiet music in the background.
Nice surroundings to look at.
Offering other things besides coffee for those that don't particulary like coffee.

The best ones for me were the ones in hotels, right on the beach (especially in Wildwood NJ), with the dated 1950's diner look and those little spinning stools, clean thick rimmed white mugs filled with good black coffee on cheesy looking paper placemats covered in two-color ink local ads, next to an ash tray and the smell of a big pile of hash browns on the grill.
Those were the days. I'll take that over Starbucks any day of the week.

Great coffee, friendly staff. My fave coffee shop has comfy sofas and big windows the watch the world go by, which is especially nice in winter when its snowing. Its also nice to have the option to sit outside in summer.

Fresh coffee, fast lines and a very clean store.
I would say a good looking staff but a "clean" looking staff.
I don't like when someone takes your order and someone else makes it and you have to wait in line again for your coffee (like in starbucks).
