Being a native New Yorker, I've had the very best--some say it's the hard water out here???

I feel your pain. I'm in southern NM and, when I visit friends in other parts of the country, invariably they say "I know this great Mexican restaurant" and I try to talk them out of it but they are dead set on treating me to "great" Mexican food.

It's just a population thing. There are few GREAT cooks in the world as it is and the GREAT Chinese and Italian cooks rarely come out here to the Southwest. There are more GREAT Mexican cooks in the Southwest than in, say, Maryland.

Geez, when I moved to the Southwest, you couldn't find a decent bagel anywhere in southern New Mexico. When I went to New York, I came back with a box full of bagels since I couldn't get them here.

I'm betting you could find GREAT Chinese and Italian in Scottsdate.

I've had great Thai food in Las Vegas. Maybe you just don't know where to look? Odds are your choices for great Italian will be limited, but I would think LV would have some pretty good Italian restaurants?

Try asking this question on chowhound.com, folks there will point out to you the best of the best for those areas.

I live in New England, used to live in Phoenix, in New England there is no such thing as good Mexican food, IMHO. So I feel your pain;)

I used to live in Phoenix. Try Jade Palace in Scottsdale or Chandler. They have real egg rolls and if you ask--they actually have duck sauce!

Environment, market demand & supply, business initiative - three factors that I could think off the cuff.
