I can't blame you for feeling the way. What they did to you sucked but don't cut off your nose to spite your face. Don't quit unless you found another job first. Once you have secured another job somewhere else, then give them the notice indicating their treatment of you was unacceptable.
Another person having more "schooling" than you is not a good enough excuse. there are many people out there who are " book smart, common sense foolish". A person with a degree does not automatically make them more capable.
Someone else will recognize and give you the chance you deserve

I would partner with the boss and create a glidepath to the position I desire. Lay down specific stepping stones how to obtain the skills needed for the job, action plan to acomplish them and of course a timeline.
I found this method better received by managers and often makes you stand out among your peers. Also, can get you some company paid training depending on the organization.
Quiting the job in my opinion would be giving up. Best thing is to deal another set of cards and give it another shot. If it doesn't work, you can always explore other opportunities.

I would give them my notice. That is just personal opinion. It's obvious that you take your job seriously. Truly, you could file a grievance with the department of labor, because you were promised the position. They should be able to show substantial evidence of why you are now too incompetent to fill the position. Don't quit your job until you have another one lined up. The bottom line is, do you enjoy your job? Do you look forward to going there every day, or do you dread it? Have you thought about taking classes that will help? If you truly enjoy this company then I'd stick it out for awhile and maybe take some classes. If it's just an "ok" job or you dread it, then I'd look for employment elsewhere and when you've been hired by someone else then I'd give notice to your current job. We all deserve to be treated with respect and there are good companies out there. One word of advise tho, never burn bridges. If you give notice, do so gracefully.

Tell the person that offered you a job that you expect them to honor the promise. If they will not, ask to speak to the Human Resources department or Personnel department about the situation. Tell them exactly what you said here and ask them to help you to recieve the proper treatment. A more drastic solution if this doesn't work is to contact you boss's boss and tell them that you have been lied to and you want to be treated fairly.

Tell them how you feel - CONFEDENTIALLY. Give them the 1-2-0. Tell them how disappointed you were, the money you spent preparing, and all, just to find out that you did not get the job. Go to the length that you thought about turning in your notice, and have contemplated it over and over. Most of all, be polite!

I would talk to them again and very nicely tell them how you feel. Then I would tell them if they do not find a full time position, you will have to look for something else

Never spend money you don't have because this kind of thing happens all the time.
When you have found a new job, give notice and then you can be happier in your new position.

wow, your situation sounds similar to mine.. im an intern and have a bacherlors but my field isnt fully into what they reallt want.. i feel like later on they will tell me the same thing, even tho they say they're trying to hire me permanent. if they do i will go back to school, (they reimburse tuition) um.. i dunno... what is your position right now? do you think there's something better out there? i dunno i say just think about it really hard before making a decision. u want to make the right choice, which ever it will be and dont want to have any regrets in the end. it sounds like maybe you shoudl just move on, but they seme to like you.. i guess wait and see what happens or talk to them?
