Most of the answers are sort of right, but the bottom line is that everything organic that goes into the tank becomes ammonia,it doesn't matter if the fish eat it or not. The only way that this organic material can leave the tank is for you to remove it. Filters only serve as a collecting point, they don't actually do any thing but concentrate the food and stuff, and provide oxygen for the bacteria that break down the ammonia. This is why water changes are very important. So, it's not overeating that kills fish, it's leaving too much stuff in their water.
To minimize this problem feed your fish tiny amounts, and only once or twice a day at most. Fish in the wild are adapted to going for long periods of time with no food at all,it's almost impossible to starve a fish. When we go on vacations, our fish do really well with a nice big water change and no food at all.

no ..not exactly but when you overfeed a fish everything he doesnt eat stays in the tank no matter if you have a filter or not but the food that gathers up will posion the tank but he wont die from eating too much if your conserned with this than i reccomend getting a corydoras catfish there really friendly and ive never had a fish that mine has attacked or that has attacked him and they eat everything off the bottom

all the food that the fish doesn't eat sinks to the bottom and rots and becomes amonia. When you over feed the fish they produce more amonia. high amonia or any amonia is like acid burning your fish.

The major waste product fish produce is ammonia, not urine. If you feed a fish too much, they pee more ammonia. Too much ammonia in the tank = death.
