Should one say...
"I have a couple apples."
OR
"I have a couple of apples."
And why?

I have a couple of apples.

"Couple" is the direct object. "Of" is required to attach "apples" to "couple". It's just like describing other groups...

a pod of whales
a flock of birds
a bunch of carrots
a pair of socks
etc.

Of course, you use "couple" if you have 2 apples. If you have more than 2, and don't want to specify the number, you say, "I have several (or a number of) apples."

'I have a couple of apples' is correct.
'Couple' is a collective term so it always has to followed by 'of'.
