What should I take out of one to put in the other? Or would it be best to directly connect them together?

I will guess you want to transfer all the files from one computer to the other. The simplest way to do that is to take the hard drive out of one computer and put it in the other. This has the added advantage of providing more readily accessible storage for files. Unless you have a SCSI (pronounced "skuzzy") card installed in the PCI slot of one of these computers, the hard drives both have IDE connection. If you find that one or both have SCSI card installed, that's a different and longer answer.

With two IDE drives, shutdown both computers and unplug each from the wall outlet or, as the Brits say, from the mains. Open the case of the one you want to mothball. Carefully unplug the hard drive's data cable (wide and flat) by pulling on the connector rather than the actual cable. Use a small Phillips screwdriver (#1 size) to remove the 4 screws that hold the drive in place. Consult the manufacturer's web site or the label glued to the drive to see how to set the jumper pin to slave. Install it in the other computer that you plan to be your main one. There should be an obvious space for additional drives. Connect the data cable (the extra connector should be half way down the cable) carefully lest you bend a pin. Close the case. Start it up. If it doesn't boot to the drive you prefer (each drive has an operating system installed), open the System Preferences (OS X) or the Startup Disk Control Panel (OS 9) and select the drive you want for the startup volume. A few days later, after you are sure youu don't want to go back to using the old computer, you may want to erase the System, Library and Users folders from the slave drive to recover some space. You might decide not to do this if you want an emergency system as a backup.

What do you mean by combine them? You could network them together. You could take the memory and drives out of one and stick it into the other. The G3's are a little old...but with enough RAM they run OS X pretty well...good enough for light surfing. I have an old G3 iMac running iTunes as a jukebox.

Cut a hole in the sides of both of them and super glue them together.
