You would have to make several different batches of the agar before you pour it into plates, and make each batch at a different pH. Once it is poured and solid, there isn't an easy way I know of to alter the pH of the agar without changing the amount of nutrients and stuff in the agar.

Immediately after the agar (which is usually in powdered form) is put into solution, the pH can be adjusted chemically using a pH meter. The agar is then poured into plastic plates to solidify.
