I will need to take an extra course this summer in order to qualify for a student loan. Any suggestions for an interesting course that isn't too brain draining???

Linguistics! 101 is great fun, but you may get hooked like I did--the higher ones are harder.

How about something in Fine Arts, like beginning drawing or painting or clay? or music or dance? Look for something that interests you and that you think may be fun to learn about or learn for a future hobby.

Pick a phys ed, or community rec course. You can get credits for swimming, for running etc - and it's even good for you!

Why don't you just pick a class you think wouldn't be as bad, go to www.ratemyprofessors.com .... then pick an easy laid back teacher. I ALWAYS do that.
