My shower has two metal soap holders...they are really nasty and need to be replaced... but not only are they screwed into the tile wall, they is caulking around them... how can I get the caulk off so that I can remove the soap holders in order to replace them?

If it is in the shower, it is probably not caulk but grout. Grout is hard and can't be cut with a utility knife. You'll need to get an angle grinder with a tile cutting blade to get it out, then you can pry out the soap holders. If you just beat on it or try and pry it out with a chisel or screwdriver, you will definately break the surrounding tile and have to replace them.

Carefully cut the caulk with a Utility knife. Then scrape off the remaining caulk with a plastic putty knife and clean with denatured alcohol.

take out the screws and pound on it from the side with a hammer. you got tiles to replace it?
