My company builds some of the stuff you are talking about. Most of what we design and build is still made in individual aluminum "boxes" that bolt down to the rocket or satellite, etc. and use circular connectors that screw on to electrical jacks on the box.

There are very few components in space that are made into removeable trays. Some boxes on Hubble and some of the components inside the ISS are exceptions.

Space-repairable electronics is a nice goal to have, but only when it is absolutely necessary. Most of the stuff flying is non-repairable, but built to very high reliability standards so it won't 'break' within its expected (useful) life.
