depends on the type of plane you have 'jack ,smoothing, shoulder, bull nose, can all have different angles.for general work 30 degrees is OK .as a rule the harder the wood or on end grain use a shallower angle.a lower angle will give you cleaner cuts but the cutting edge is more prone to breaking and will need sharpening more often .keep cap iron etc close to blade edge when setting up plane to prevent chatter, about 1 mm back will prob be OK. when sharpening lock your elbows into your sides an rock to and fro on your feet so you don't change the angle. use white spirit for lubricant as it keeps the stone clean oil blocks the the stone.or clean water if using diamond .DE-burring the blade is very important get depth of shine, back of iron should be like mirror finish .good luck ,from carpenter and joiner who made stair case for hide park police station and has over 25 yrs hands on

Valid answers so far... one most important, The TYPE of plane.
Most logically the answer might be. To the "ORIGINAL" angle created during the manufacture of the blade.
I don't use them any longer, but have some Trophy planes perhaps 100 years old.
