I have an idea of a really great kind of food...for a restaurant to sell for me, but i dont know where to begin....what do you think i should do

Make an appointment with the person in charge of making the necessary changes. Usually this will be the owner or head chef.

Take a sample of your work to him/her. You may first though want to see if you can have the idea copyrighted.

Any franchise is limited in what they're allowed to carry, they have to toe the line with the basic products they're signed with the parent company to carry.

You'd have to look at independant restaurants to approach. I'd call and ask to talk to the manager for 20 minutes, that should get your foot in the door.
