I have a 1981 xv750
I must go very easy in first gear or else the bike starts jerking and grinding(sounds like rocks in a coffee can). Once I go into second gear i can give it full power and the bike goes. no other problems with the other gears. clutch is not slipping and is adjusted properly. On occasion when the bike starts jerking the gear shift jams and i cannot get second gear unless i pop the clucth a few times and then i can get second. If I feather the clutch when I an starting out I can get up to about 10mph before the jerking starts.

Bent shift forks, by now fist gear and the dog that engages it are also shot. Or it could be the needle bearings that first gear rides on is gone.

Most likely a shift fork is worn or bent.
The transmission gears that operate 1st gear aren't fully engaging (that's the coffee can noise). The gears are just about to engage, but grind against each other instead.
Transmission getting stuck - the shift fork can't fully move the gears away from each other to disengage them.
The engine should be disassembled to repair the trani.
