There are at least three choices: you choose words that rhyme with Elizabeth, like death, breath, breadth, etc., you don't use the name at the end of a sentence so your rhyming words don't have to rhyme with it, or you write unrhymed verse (free or open verse) so it doesn't matter. Here are some examples:

Words do fail with Elizabeth
Who wins without compromise
By speaking until she's out of breath
And her listener gives up or dies

Elizabeth is more than just a name
She's the essence of femininity
Beauty, grace, and devoid of blame
And a perfect match for me

Never a girl so quickly won
A heart so effortlessly
As Elizabeth did when she won mine
With just the pursing of her lips

ELIZABETH is a hypnotist, all day long she will hit you with her fist. First she'll cry then she'll laugh and take your money for the hour and a half.....start with the name first then stare at the stars before you know it you'll end up in the bars.
