when we takeout a metal tray our fingers stick with it .why it happens?

There's a couple of things going on here. First of all, when the metal tray gets cold, as in a refrigerator, evaporated moisture in the air condenses and so you get a very thin film of liquid moisture on the metal tray (there would be some non-liquid moisture in this film if we were talking about a freezer, but there would still be liquid on top of the ice). Our hands also have a lot of moisture on them, as well as containing many many small ridges. So when you grab that metal tray out of the fridge, the moisture fills in all of the ridges on your hands and fingers and the cohesive nature of water gives the initial stickiness, but as your fingers pull away it also forms a suction-cup effect due to the large surface area and moisture-sealed areas. In a freezer, the effect is much larger because this very small amount of moisture is so thin that it actually freezes to the tiny ridges on your hands and when your fingers get free this ice melts back to moisture, leaving your hands wet but otherwise perfectly fine.

I think it happens because you have you refrigerator set way too cold! I have only seen this happen from trays or other metal items taken out of a freezer. The thin film of moisture normally present on your fingers freezes instantly, sticking them to the tray. Try grabbing the cold tray with thin rubber gloves (that are dry) and see if the problem goes away.

This happens because the moisture from the air, and your hands freeze on contact with the metal. Same thing goes with ice thats been freezing for a long time.

Maybe water vapor freezing between the tray and your hands?
