Organic candles are made with better quality ingredients, for example organic soy candles, and even non organic soy candles burn so much cleaner and more even than regular wax based candles.
They don't produce as much soot.
Honestly it depends on how they are made on whether or not they smell better than non organic ones.
Organic doesn't really make them better, it's not like you are eating them or putting them on your body.
It's simply a fad, and may be helping the economy of small organic farmers.
My favorite candles are Old Virginia, and For Every Body
they aren't organic or soy, and they smell great.

I'm not super informed on this but I know that some candles give off smoke, I know that beeswax candles are natural and are used in church, and I also know there are two kinds of candles you can buy in the grocery store, one of which is called the utility candle and seems to last a lot longer and it used to be used like for when the electricity goes out. There are also candles used for keeping butter warm (when you're having a meal). So I've come to the conclusion that different purpose candles are made different one from the other.
from wikipedia:
The candle can be made of paraffin (a byproduct of petroleum refining), stearin (now produced almost exclusively from palm waxes), beeswax (a byproduct of honey collection), gel (a mixture of resin and mineral oil), some plant waxes (generally palm, carnauba, bayberry, or soy), or tallow (rarely used since the introduction of affordable wax alternatives).
It is commonly believed that the candle made of beeswax and/or soy burn more cleanly than petroleum based paraffin waxes. However highly-refined paraffin wax can burn as or more cleanly (with regards to particulates created during combustion) than natural waxes. The type of wick and inclusion of any scents and/or dyes have a much greater impact on the release of compounds, particulates, and smoke, regardless of the base material. The cleanest burning candle will therefore be unscented and undyed ...

Candles have diffent types of wax, there is bees wax, soy candles, and I have heard of other types of waxes used, so I guess Organic would be exactly that some type of organic wax.

Organic candles are normally made of soy or bee's wax and don't contain chemicals. They are supposed to burn cleaner.

i have bought both .. and find organic candles just seem to last longer a bit ... but here is some reasons to buy organic over the other ones...
TEN GOOD REASONS TO BUY ORGANIC WAX CANDLES
1. Organic Candles meet strict standards.
Organic candle manufacturers are at the forefront of the movement to produce candles achieving the highest standards for clean burning wax, pure essential oils, and cotton wicks.
2. Organic candles burn great and are competitively priced.
Organic candles are beautiful and are tested to burn cleaner than paraffin which puts harmful pollutants and soot into the air. And organic wax is competitively priced.
3. Organic production is non-GMO
Organic candles come from vegetable oil sources that are Certified Organic and non-GMO. Other soy wax comes from Genetically Modified soybeans even if it fools the GMO tests.
4. Organic farms respect water resources
Using wax from organic oils promotes the elimination of polluting chemicals and nitrogen leaching, which is done in combination with soil building, protecting and conserving water resources.
5. Organic candles help organic farmers build healthy soil.
Organic farmers build healthy soil which is the foundation of our food chain. The primary focus of organic farming is to use practices that build healthy soils.
6. Organic candles are in harmony with nature
Organic agriculture and the use of organic products shows respect for the balance demanded of a healthy ecosystem: wildlife is encouraged by including forage crops rotation and by retaining fence rows, wetlands, and other natural areas. Organic producers promote forest preservation and sustainability.
7. Organic producers and processors are leaders in innovative research.
Organic candle makers have led the way, at their own expense, with innovative research aimed at bringing organic wax and organic candles to market and are in the forefront of the drive to establish organic standards for non-food agricultural products.
8. Organic producers strive to preserve diversity
The loss of a large variety of species (biodiversity) is one of the most pressing environmental concerns today. The good news is that many organic farmers and gardeners have been collecting and preserving seeds and growing unusual varieties for decades.
9. Organic wax helps keep rural communities healthy
USDA reported that in 1997, half of U.S. farm production came from only 2% of farms. Organic oilseed production for wax can be a lifeline for small farms because it offers an alternative high value market for their crops.
10. Organic abundance - Foods and non-Foods alike!
With Organic Candle Wax, another product category has an organic alternative. Just like cotton, which most experts mistakenly thought could not be grown organically, vegetable oils for wax can be grown competitively with organic methods.
