Melted sugar does not form carbon and water; it decomposes into carbon and water when the temperature gets high enough. Melted sugar is simply a sugar syrup.

Similarly, salt, when it melts remains salt until the temperature gets high enough and it evaporates. But it does not decompose into sodium and chlorine, rather it turns into sodium ions and chlorine ions in a vapor form
