Simply read the symbol like you do any other word... you read from left to right... so the symbol is the same way...
< reads as (object on the left) is LESS than (object on the right)
> reads as (object on the left) is GREATER than (object on the right)
... with the "open" side towards the larger of the two numbers in order to make the equation correct. (Or the pointy side going towards the smaller of the two numbers)

If your into animals, use the alligator or the fish(shark) but if your into games, use pacman.
The sign is a big, hungry alligator/fish/shark and it wants to eat the biggest number!
Mr.Pacman wants to the higher number to get the high score!
It sounds silly, but it works.

I was told to think of it like a mouth that always eats the bigger number so 10>6 and 4<8 I hope that makes sense.

The easiest way to remember this is to look at the symbol. The point (small side) goes to the smaller number, the open side (big side) goes to the bigger number.
So, < is less than, > is greater than.
Another way to think of it is to think of it as Pac-Man's mouth...Pac-Man eats the bigger number.
