travelling wilbury's - bob dylan, george harrison, jeff lynne, roy orbison, tom petty
highwaymen - johnny cash, willie nelson, kris kristopherson, and waylon jennings.
the best recent side project are the raconteurs
jack white - white stripes, do whaters
brendan benson - great solo artist
lil jack lawrence - greenhornes, blanche, do whaters
patrick keeler - greenhornes, do whaters

Apart from his solo career, Glenn Hughes (ex-Deep Purple) has done some killer albums with the Hughes Turner Project and with Voodoo Hill.
Neal Schon has had four pretty decent ones away from Journey: HSAS / Hardline / Bad English / Soul SirkUS

I'm going to say Iron Maiden's Bruce Dickinson, ....but it's not musical "Side Projects" . When not touring, Bruce is a commercial passenger airline pilot, and flys the huge 757 for an international airline named Bryce Astraeus, and holds a title of "First Captain". He also is the CEO of his own fencing supply company , ....that's swordfighting, not digging holes and barbed wire and gates, etc. LOL!

Mike Patton. he is a workaholic. i dont even know which band id consider his 'main' project. and everything he does is great!
hes work in/with Mr Bungle, Faith No More, Fantomas, Tomahawk, Lovage, Peeping Tom, The X-cutioners, Rahzel, Kaada, and some more, i cant keep track

aaron gillespie of the band underoath has a really great side project called the almost. and also that one guy from the band falling up has a side project called the send.
