What is thie difference between Samurai X and Samurai X OVA?

I think you are referring to the tv series. In which the OVA means Only Video Available. They are released straight to video and usually are longer than 30 minutes and are made to compliment the tv series like adding extra background or telling you what happened after the series ended.

Samurai X (or also known as Rurouni Kenshin in Japan) is the series that shows you about Kenshin Himura.

Samurai X OVA is about his past as an assassin or basically, before he turned from killing and met Kaoru Kamiya.
