i work as a waitress and find the best way to deal with difficult guests is to smile and be polite to them, i get all the difficult guests where i work and if they are rude i still smile and get on with my job, the only time i have said anything back is when a male guest was really rude to another waitress he wouldn't stop shouting across the restaurant that she had put so much weight on, so i told him he hadn't lost the weight around his mouth and to stop being rude to her or i wouldn't get his dinner, he apologised the next day and was polite for the rest of his holiday, i still believe that even if someone is rude to you it should always be met with politeness there is no point in lowering yourself to their level.
