There isn't any big rivalrys anymore only traditional and regional ones. And most of the heated rivialry are a byproduct of the fans hating the other fans rather then the actual players hating the other team. All of the Origanl 6 is something of Nastalga and one such has the battle of Alberta has resulted in fans of the other team pulling for the other during their cup run. (In the name of Canada)
The last true great rivalry was the Colorado vs Detriot but that has really been dead for some time now. There is a handful of Wings left and Joe Sakic for the Avs. It will be a long time before any non-traditonal cross regional rivalry brew up, with rules to disable fighting, power play fest and now that the NHL is in the salary cap era there isn't going to be perennial power houses in the East or West to sustain constent Confrenece Final clashes or at least 2nd round battles between teams year after year.
As far as does anyone care about hockey, well if your definition of anyone is ESPN then there is a limited number Melsoe, Bucchigrass, Linda Cohn. The Fact ESPN does not carry the NHL is a major reason, why would ESPN want to promote a sport on another cable network that wouldn't make any business sense. If you definition of anyone is the human race then that is somewhat of a ridiculous question because there is a large number of youth hockey oraginzations, a cable network and NBC actually broadcast games and there is 15k fans plus in the barns every night

The Toronto vs Montreal rivalry is alive and well in my house even though it has calmed down over recent years in most places. For the past ten years or so, the Leafs seem to be getting a lot of hatred from that place our money goes to die.
So, here is a new list of the top rivalries as I see it:
Toronto / Ottawa replacing Toronto / Montreal
Edmonton / Calgary
Detroit / Colorado relpacing Detroit / Chicago
New York Rangers / New Jersey replacing NY / Boston
Since rivalries are created by the fans, I guess people must care.

I have to agree that the longest rivalry is Leafs/Habs, but Detroit/Chicago has always been a good one too. Detroit/Colorado has become a good rivalry in the last ten years or so also.
As for the second part of your question: Yes many people care about hockey. The problem is the media doesn't. And since ESPN lost out on the games they have hardly any coverage at all. I guess if they can't have a piece of the pie they don't want anyone to know it exists. If you don't think people still like hockey try getting tickets to any arena. They may have tickets available but you'll see good crowds everywhere.
Good question. I think I'll give it a star.

If people didn't care, would anyone be here to answer your question? The biggest rivalry has to be the oldest one Toronto and Montreal. Some others are noteworthy like Calgary and Edmonton but this rivalry predates the NHL.

By far I know it is the Habs-Leafs. It has been that way since the original 6 days. Does anyone care about hockey? I can tell you with a resounding YES a lot do. It is just to bad that Bettman seems to be in bed with the NBA and is trying to run hockey into the ground. Thats why it does not seem like a lot of people like hockey.

Historically Montreal and Boston or Montreal and Toronto.
MTL Boston probably wins out as the met so often in the playoffs.
After watching last night's pre-season game between Pittsburgh and Montreal that had more intensity than some playoff games, I would say that their is a new Mtl-Pitt rivalry being born.

Id say Canadiens and the Maple Leafs. Ottawa and Buffalo was intense this past season, and the entire Northwest division was fierce too.
Yes, I love hockey and I think a lot of Americans do too, football is just a bigger market.
