Sweating causes one's body to be covered with a layer of water. Normally, the environmental humidity is not high, thus more water molecules would be evaporated than condensed. When water evaporates, the water molecular kinetic energy drastically increases. The environment needs to provide that energy, or heat, to water molecules in order for them to evaporate. When the heat is carried away by water molecules during its evaporation, your body is cooled down.
