here is what I did when out on the road:

I bought canned meals. and had my own throw away bowl that is microwavable. you can heat it up a the truck stop for free.
packages soups, at like are easy to heat you can buy a heater ( for a cup) in the truck stop usually fairly cheap. you heat the water in your ceramic cup then add your soup, also ramin noodles ( cup o noodles)in a cup works the same but poor the water into it.

The best thing I ever Bought was a plug in cooler. buy it at a store like walmart.. its cheaper this way. also never buy sodas or food from a truck shop its way more expensive.

with the winter months coming you can actually place a box behind your tractor such as a cooler and store some things there but keep in mund at how dirty you walk is is how dirty that box will be.

Your truck stays fairly cool under your bunk. you can short term ( a few hours at most) place salads or things under there. and they will stay fairly cool. but I would never suggest keeping them there for more than a short time.

also the PBand J and like things make for a nice quick meal

Most good camping coolers can keep ice for up to 5 days, some can keep ice up to 7 days. The most expensive bag of ice is going to be 5 dollars at any truck stop or store. Ice goes for 99 cents up to 3 dollars at most grocery stores. Some Zip Lock Freezer bags will keep your stuff dry and clean

You can find a cooler that plugs into a lighter outlet at Walmart or any camping store.
